The Story Behind Our Herb Pappardelle
Why Taverno's signature pasta stays on the menu while still changing with the garden.
The herb pappardelle began as a staff meal. We had pasta dough, a bowl of soft herbs and a small piece of pecorino that needed a purpose before the end of service.
The first version was not polished, but it had the feeling we wanted: generous, fragrant and direct. It tasted like the kind of dish a neighborhood restaurant should know how to make without trying too hard.
A Dish With a Framework
The pasta stays because the framework is strong. Wide noodles, bright butter, herbs, crunch and cheese. Inside that structure, the dish can move with the season.
Why Guests Remember It
